Goat Cheese with Olives, Lemon & Thyme

One of my favorite reicpe sites is Epicurious.com. They have recipes called "Quick and Easy", which I always go to when I need something that looks and tastes impressive, but was really easy. This recipe is made almost like an ice cream sundae - but with goat cheese instead. The olives, lemon and thyme are heated and then poured over. A real Mediterranean delight!




INGREDIENTS 

1/2 cup assorted olives
3 fresh thyme sprigs
3 tablespoons extra-virgin olive oil
1/2 teaspoon grated lemon zest
1 (4- to 5-ounce) fresh goat-cheese medallion or 2 (2-ounces) goat-cheese buttons (room temperature)

PREPARATION

Heat olives, thyme, oil, zest, and 1/4 teaspoon pepper in a small skillet or saucepan over low heat until fragrant (do not simmer). Cool to room temperature.
Serve olive mixture over goat cheese. 
(We use rosemary crisps or warm french bread from the grocery store to serve along side).

Serves: 4
